How to make Healthy Raspberry Cream Pie?


It only takes 4-ingredients to make the base of the pie and another 4-ingredients to make the filling. These ingredients are simple and not expensive at all.


All you need is:

  • Rice flour
  • Coconut flakes
  • Coconut oil
  • Honey
  • Curd or cream cheese
  • Eggs
  • Raspberries

Healthy Raspberry Pie

Here is how to make a budget-friendly pie for your guests or family:


Step #1: Preheat the oven to 175C.


Step #2: In a bowl, mix together flour, honey, coconut oil, and coconut flakes. Put the mixture into the fridge for 15 minutes.


Step #3: Grease the cooking mold with oil, press the base mixture onto the bottom and sides of the cooking mold. Place the cooking mold into the fridge.


Step #4: In a bowl, mix together curd, eggs, and honey until all well combined. Take the cooking mold out of the fridge, and pour the filling on top of the pie base. Add raspberries on top of the pie.


Step #5: Bake the pie for 40-50 minutes. Take out of the oven and let it cool!


Healthy Raspberry Cream Pie is ready to be enjoyed!


Tips for this recipe


I recommend adding raspberries to this pie after you pour the filling on to the base of the pie. It prevents the raspberries from getting too mushy. 


You can also leave out the coconut flakes. For me, they gave this pie one extra layer of flavor and made the pie base even more interesting.


Also, if you want your cream cakes to be creamy and not overbaked, I recommend always using sticky sweetener. I learned this trick, when I was baking my favorite Manhattan cheesecake for the tenth time, and saw what is the difference baking with granulated sugar or sticky sweetener. Honey is always my first choice! 😉
