Step #1: Preheat the oven to 200 degrees. If necessary, grease the muffin cups with olive oil or any other cooking spray. 

 

Step #2: Mix together grated zucchini, rice flour, olive oil, egg, and cottage cheese until all well combined. 

 

Step #3: Add chopped chicken ham, salt, pepper, and oregano. Stir until all combined.
