Sugar Free Blueberry Cake – Healthy and Gluten Free!
Finally! Meet my tested and perfected Sugar Free Blueberry Cake Recipe! I have made this kind a cake many times now, and it finally turned out the way I want a sugar free blueberry cake to be.
Super moist and full of flavor – this sugar free blueberry cake is pretty easy to make. It tastes absolutely amazing. Crunchy base and creamy filling, it really can’t get any better! Am I right?
I was super excited, when my mom brought me over 2 kilograms of blueberries. I instantly started thinking about recipes I should make – blueberry muffins, cake, pie, ice cream etc. So many options! But I decided to make a cake, because well who doesn’t love cake. Plus, I made Rhubarb Fruit Soup with Blueberries and these two are match made in heaven for me – childhood memories. 😉

I am definitely going to post my Rhubarb fruit soup aka kissel recipe some time soon. But first I want to find the perfect balance between the sweetness of the honey and the sourness of the rhubarb.

The ingredients in this cake are cheap and most of them can be found in every kitchen. And if you don’t have any blueberries you can definitely try other berries. I even thought about rhubarb, and combining rhubarb and blueberries together, but because I had so many blueberries I decided to make all blueberry cake.
All you need for this sugar free blueberry cake:
- oat flour
- baking powder
- curd or sour cream
Here is another hint! Out of this base recipe you can make cookie though truffles as well, just combine together oat flour, butter (or coconut oil), honey and salt, add some chocolate chips. Roll into balls and enjoy! 😀

Sugar Free Blueberry Cake
This Blueberry Cake is Sugar Free, Gluten Free, Healthy and super Delicous! Pretty easy to make and full of flavor. Baking time 40 minutes.
- 4 dl oat flour
- 100g honey
- 150g butter
- 0,5 tsp baking powder
- 0,5 tsp salt
For the filling:
- 2 eggs
- 120g honey
- 3 tbsp oat flour
- 150g curd
- 150g ricotta
- Preheat the oven to 180°C.
- In a bowl. mix together flour, baking powder and salt. Add honey and butter, use your hands to combine all these ingredients nicely together.
- Press the base mixture onto a baking mold (24cm).
- For the filling, mix together curd and ricotta, add eggs, flour and honey, stir until well combined. Pour the mixture onto the cake base. Now add blueberries and spread them around.
- Bake for 40 minutes, let it chill and enjoy! 🙂
