Some tips and recommendations for making Chocolate Muffin:
It is important to add cream cheese to the chocolate muffin batter as well, because using oat flour can make these muffins tense and not soft at all. Plus cream cheese gives muffins the extra moistness they need. The batter is super easy to make, and take only 30 minutes to cook. And the cream cheese layer is even easier to make, and ready in seconds. Perfect dessert to make, when you have guests coming over, but don’t have time to bake for hours.
You can add chopped strawberries into the frosting as well, so the strawberries won’t be there just for the garnish for the chocolate muffins, but for the flavor as well.
Another tip would be to add homemade strawberry jam inside the chocolate muffin after baking them. As a result, you will have extra special chocolate muffin literally full of flavor.
All you need is:

- Oat flour
- Cocoa powder
- Baking powder

Chocolate Muffins with Cream Cheese and Strawberries
An easy and simple chocolate muffin recipe with cream cheese frosting and strawberries. Baking time only 30 minutes – perfect dessert, when in a hurry!
- 125g butter (room temperature)
- 150g cream cheese (room temp.)
- 3 eggs
- 150g honey
- 3,5 dl oat flour
- 2 tsp baking powder
- 2 tbsp cacao powder
- 1/2 tsp salt
- 75g sugar free chocolate
- 300g cream cheese
- 50g honey (add more if you like it sweeter)
- Preheat the oven to 175ºC.
- Whip together butter, cream cheeses and honey. Add eggs and whip until smooth.
- In another bowl, combine flour with baking powder, cacao and salt, add to the cream cheeses mixture. Mix until all well combined (do not over stir it). Chop chocolate and add to the batter.
- Bake for 30 minutes.
- Now the cream cheese frosting, mix together cream cheese and honey. When muffins are cooled then you can add the cream cheese layer and strawberries for garnish.
