Sugar Free Peanut Butter Cookies

If you are a huge cookie lover like me then you will definitely enjoy my Vegan Peanut Butter Cookies as well. Both recipes are super easy to make and ready in no time. Just whip everything up in one bowl, bake and enjoy!


Texture-wise, you have to be very careful with the cooking time. Bake them too short, and you’ll very soft cookies that have to be enjoyed immediately. Bake them for too long, and you will have crackers instead of cookies. The right balance is to take the cookies out of the oven when they are golden but still soft. These Sugar Free Peanut Butter Cookies will firm up very fast if you let them cool a little. And they are still soft, chewy, and irresistible.

Vegan Cookies

These Sugar Free Peanut Butter Cookies are eggless and made only with 5 simple ingredients. You can make these cookies vegan too if you substitute honey with maple syrup or agave syrup, and use dairy free chocolate instead. Or you can also leave out the chocolate, but I don’t really recommend it, because chocolate makes these cookies a lot better.


How to make Sugar Free Peanut Butter Cookies


It only takes 5 minutes to whip up the batter for these cookies, and then you’ll have a deliciously irresistible treat to enjoy with a cup of coffee, milk or tea!


Step #1: Preheat the oven to 200˚C.

Step#2: On a water bath, melt honey with olive oil and peanut butter until all well combined. Add oat flour to the mixture and stir. The mixture should be thick enough so you can roll little cookies between your palms. Place the mixture into the fridge until cooled.

Step #3: Add chopped chocolate to the cooled batter so the chocolate won’t melt. Scoop one tablespoon from the mixture and roll balls between your palms. Place them onto the prepared cooking tray and flatten them with a fork. Bake the cookies for 15 minutes. Let them cool.

Step #4: Melt chocolate and drizzle over the cookies. Or tip the cookies into the melted chocolate. Let them cool in the fridge until the chocolate firms up, and enjoy with a glass of milk! 😉

Customizing the recipe


As I said before, you can make these cookies vegan as well. It is pretty simple, you only have to replace honey with maple syrup or agave syrup, and use dairy-free chocolate instead. Or another option is to leave out the chocolate, which I don’t recommend flavor-wise.


Also, you can add coconut flakes or even chopped nuts to the cookie batter, so it will be even crunchier. I usually put coconut flakes at the top of melted chocolate so it tastes great and looks beautiful as well.

You can also use some other nut butter instead of peanut butter. But keep in mind that peanut butter gives the most flavor to these sugar free cookies. Therefore, I recommend adding some crushed nuts to the mixture, when using different kinds of nut butter (cashew or almond for example).
